Inherited from Old Spanish sabuco, from Latin sabūcus, variant of sambūcus. With the case of Spanish, it was influenced in Vulgar Latin by the suffix -uccus (hence the -c- instead of expected -g-). Compare Galician and Portuguese sabugo, Asturian sabú, Catalan saüc.
