A technical/medical and literary verb: for a substance, to tighten or contract organic tissue (un colirio que astringe los tejidos), which is also its most common everyday extension — being constipating (astringir el vientre). More broadly and formally it can also mean to bind or oblige someone. Astringente, the related adjective used for foods and cosmetics, is far more common than the verb itself.
Only recognizing astringente (the adjective, common on skincare and food labels) and being surprised that astringir the verb exists and is even rarer in everyday speech than the adjective it's related to.
